PB & J Cake!


It is my son's annual Pre-School Halloween Carnival! I have to bring a cake for their booth which is the cake walk this year. I want to bring a cake that taste yummy but looks awesome that everyone will want to get so they will participate in the cake walk! The best looking cakes always get the most people on the cake walk.

So...I found an old cake recipe book at my granny's house that is a cake that looks like a peanut butter and jelly sandwich! That is perfect for preschoolers!


It seemed really simple too when I read the directions and I wondered why I never thought of that before!

I had to change the recipe a bit though to make it work better, but it turned out so wonderfully awesome I just had to share it with you!

Here is the recipe:

PB & J Sandwich Cake

1 package white cake mix (and ingredients listed on the box to make the cake)

1 cup powdered sugar

4-5 Tablespoons of creamy peanut butter

3-4 Tablespoons of whipping cream

1 Tablespoon butter softened


about 1/4 to 1-1/2 cup strawberry or grape jelly (I used grape in the squeeze bottle and it was so easy to spread that way.)











Preheat over to 350, Spray two 8 inch square baking dishes with non-stick cooking spray. (I didn't have two that matched so I bought the cheap foil ones found in the grocery store, and I liked how it was much easier to pop them out than it would have been in a regular cake pan.)


I keep a package of white cake mix on hand that I use to dust all of my baking pans instead of using flour. This works out so much better and you never have that icky white stuff on the sides of your cake that flour leaves. So dust your pans.




Mix the white cake mix according to the directions on the box and pour them into the two pans, dividing the batter equally between the two pans. Bake for about 25 min. or until toothpick inserted comes out clean. Let cake cook in pans on wire racks for about 30 min, then remove from pans after completely cool.

Cut off the brown tops of your cake leaving a "bread crust" look around the edges. The idea here is that they should look like sliced white bread. I placed mine on wax paper so it is easy to flip over and move.







After cutting both tops off, put one on your serving tray or plate cut side up, and then place another piece of wax paper on the second layer and flip it over so cut side is down, set aside.

Beat powder sugar, peanut butter, cream and butter with electric mixer add only part of the cream at a time to make your frosting.

Gently spread the peanut butter frosting over top of the cut side of the layer on the serving tray. If you dip your knife in hot, very hot water each time you get more frosting you will not have crumbs in your frosting.





You don't have to spread it perfect because it is supposed to look like peanut butter in a sandwich. Then squirt your jelly on top of the peanut butter. Then put the second layer on top cut side up.


You can cut the cake in half diagonally to really resemble a PB & J if you like or leave it just as it is. It really resembles a PB & J either way! This is easy!
