Oven Fried Zucchini Fries

Zucchini is plentiful in the garden this time of year and I find plenty of ways to use it.  Zucchini fries are always a hit with my kids because they think since I call them fries they must NOT be good for you....haha! 

Here is a my recipe for them.   I like to put this in a baggie and do a shake and bake kind of thing.  If you do that try a few fries at a time, not the whole lot! 

2/3 cup seasoned bread crumbs
1/4 cup Parmesan cheese
1/8 tsp garlic powder
1/8 tsp onion powder
1/8 tsp paprika
salt and pepper to taste
2 medium zucchini
2 tsp olive oil

pre-heat oven to 475

combine all ingredients except last two.   Slice off ends of zucchini and cut lengthwise, and cut the two halves in to three inch long pieces.  Cut each piece in half lengthwise and in half again several times until you have the shape of french fry. 

In a bowl or plastic bag combine oil and zucchini with about 2 tsp of water and shake to cover each piece of fry.   A few fries at a time shake into baggie or dredge in a bowl to cover with the bread crumb mixture.  Arrange in single layer on a non-stick baking sheet Bake until golden brown about 10-12 min turning half way through.
